What I Ate Wednesay! 21 Week Preggo Diet
My appetite has definitely balanced out a lot lately, gone are the days of the raging hunger, now we are at the days where I have to be careful how much I eat or I get a bit of heartburn, a full bloated feeelig, or burping up my dinner for hours on end. I've turned to eating smaller meals more regularly throughout the day or breaking up my lunch and eating half early and half of it later. So far it's really been working.
Breakfast was coffee with 2% milk and Cajun Kale and Eggs.
Then to up my greens intake I had a smoothie! There was a handful of spinach, one leaf of kale, 1/2 a banana, a handful of mixed frozen fruit, a tablespoon of flax seed (ground), a couple spoonfuls of cooconut milk (the really thick stuff out of a can), and then water. It was delicious! I have definitely been missing my coconut milk smoothies - beats anything else I've tried.
I was pretty starving by 10:30 so I decided to eat half of my lunch – meatloaf, mashed potatoes with gravy and cauliflower.
I forgot to take a picture of it, but there was some leftover Chinese food from a meeting and I wanted some broccoli so I had a couple pieces before deciding it was just too salty and threw it away!
Second lunch was around 2 pm and included more meatloaf, mashed potatoes and cauliflower!
My meal planning has been rather lax the past couple of weeks due to being too tired and busy so we had nothing planned, Mark made himself some KD and I fried up a couple of sausages and ate ‘em with a makeshift salad of lettuce, sunflower seeds, cheese and some Italian dressing. It was pretty good and hit the spot.
For a bedtime snack I wanted a little something sweet and made some caramel popcorn, my favourite at the moment. I don’t really use a recipe anymore, but it’s so easy, butter, sugar, and then I like to stir in a little bit of water to help thin out the syrup. And it’s soo good. I’ve been doing really teeny amounts lately as I’m trying to avoid too much extra sugar, that's why you can barely see anything. When I was younger I would coat the popcorn in caramel - also good but while mama may need it, baby does not.
