Three Ingredient Peanut Butter Cookies

I really wanted to post a healthy meal recipe today.
BUT Mark has been doing most of the cooking lately and I’ve had a lot going on so we haven’t really done much grocery shopping and when it comes my turn to cook it has been leftover Chinese food or pizza. I’m not proud to admit it but it just goes to show that without proper shopping and planning anyone can fall victim to the Standard American Diet.
I admit it has left me feeling a little bit crappy – so that’s why we made sure to go out and buy lots of fruits and veggies and good healthy food.
The takeaway here is not to feel bad or guilty if you find yourself falling into these convenience eating patterns but recognize how it is making you feel and why it’s happening and take steps to fix it so you can eat healthier next week.
It is my firm belief that there is no room for guilt in eating!
That’s why this week I am giving you my favourite peanut butter cookie recipe.
These are the best, easiest peanut butter cookies you will ever eat or make. All you need is three ingredients that you most likely have around the house already – which is probably why I make them so much.
Yep – this is the third time this week I am pulling a batch of these babies out of the oven.
I believe that in a healthy diet you should never feel deprived – in my experience deprivation only leads to binging. So you should allow for your sweet tooth or whatever it is and the best way to do that is to make your own treats because at least then you know what is going in them and how much sugar.
And so here are my Favourite Peanut Butter Cookies.
Easy Peanut Butter Cookies
1 cup peanut butter
1 egg
1/4 – 1/2 cup of sugar
Optional extras
1/4 cup of chocolate chips
1/4 cup of oats
flax or chia seeds
I often end up putting chocolate chips in these because Mark loves chocolate, or add oats or flax or chia seeds to add a little fiber or omega threes. These cookies are so easy to change-up – M&Ms would probably be delicious in there too.
Preheat oven to 375
Mix peanut butter, egg and sugar in a bowl
Spoon about 1″ balls of dough onto cookie sheet
Bake for 10-15 minutes until they turn a little brown around the edges.
Let cool and then enjoy!
These cookies are so great because they literally take 5 minutes to prep and before you know it they are ready to eat.
