Meal Planning Sunday!
Sunday - Lasagna, there are so many variations on this classic dish, you can add all different kinds of cheese, mix up the meat, add different veggies, even go meatless if you so please. This is a super basic recipe, add a salad for some veg, or toss in some spinach and mushroom or even some zucchini [that would never fly in my house unfortunately :( ]
Shopping List:
Lasagna Noodles
2.5 pounds ground beef
1.5 jars spaghetti sauce
36 Oz Cottage Cheese
2 - 4 cups Mozeralla Cheese
Parmesan Cheese
optional: Spinach, mushrooms, onions
Monday - Veggie Stir Fry with Egg Rolls
Shopping List:
rice
stir fry veggies (we have some frozen ones but pick your favourites, onion, brocolli, carrots, mushrooms, bok choy, go nuts!)
Ginger
Garlic
soy sauce (lately I like my veggies just fried up with a little soy sauce, but sometimes I'll add a little honey or some hoison sauce. We have some Blue Dragon stirfy sauces that I found a Safeway a while back so that's what I'll be using)
egg rolls (we made these a couple weekends ago and froze 'em. You could always add chicken or beef or whatever to the stir fry if you want some protein in it or cashews that can be really good too!)
Tuesday - Taco Tuesday

Wednesday - Shepherds Pie, Mark made this last time and I know there are tons of variations on how to do it but the last time we did it and to cut down on ingredients this is a simple way.
Boil and mash potatoes, fry up onion and ground beef, add in the mixed veggies, pour it into the bottom of a baking dish, prepare the gravy mix with water and pour it in (my friend told me she puts a layer of cream corn in between this and the potatoes which sounds pretty good too), then layer the mashed potatoes on top. Easy Peasy.
