Meal Planning Monday

I really struggle with knowing what to make for dinner on a daily basis and I know I'm probably not the only one. I also noticed that we’ve been spending quite a bit on groceries lately from running to the store all the time to pick stuff up, plus that inevitable question from Mark that I get at 2 or three in the afternoon – “What do you want for dinner?” I don’t know!!!

A lot of times we end up doing the lazy thing and throwing whatever pre-made food we have into the oven for dinner – which is not good – and especially lately I am just so over processed foods. Ever since the pizza. Yuck.

So to save money and to make sure we eat healthier meals I am really trying to get into meal planning on a weekly basis.

This weekend was really busy and I really didn’t have time to think about it so we ended up just going grocery shopping yesterday without much of a plan, spent a butt tonne of money – but Mark always loves to pick up a bunch of meat and hopefully this will last us two weeks or so. Now the challenge (or not that much of a challenge) is to come up with a meal plan using what we already have so we don’t need to run to the store!

For some reason it’s so much easier to decide what to eat ahead of time. I have no problem deciding what every other day of the week but when it comes to what to eat tonight, when I’m at home and actually have time to cook, I’m just like “I don’t know what I want to make…. “ I like the idea of Meatless Mondays, but I just don’t know what to make today!

Mark is going on a marathon egg roll making spree today so maybe we’ll do some kind of stir fry or something to go with it. Yep that sounds good to me!

Monday – Egg Rolls and veggie stir fry

Tuesday – Thai Chicken Curry (we bought a Thai Red Curry sauce grocery shopping yesterday - hopefully it's good!)

Wednesday – Chili

Thursday – Coconut Crusted Chicken with Basil and Tomato Rice

Friday – Steak, roasted potatoes and Brussel sprouts

It’s kinda funny, because growing up, for me, weekends were always lazy food days like we never really made a huge deal out of dinner – maybe Saturday we’d have make your own pizza night or something but it was more like, eat whatever is around, then Sunday we’d have a nice lunch after church and dinner was more of a ‘grab and growl’? I don’t know if that’s the right term, my friend used it once and I kinda like it. Like eat whatever is there – first come first serve.

For Mark, weekends were always really nice dinners, roasts and whatever. It’s just funny, because I never even give it a second thought and Mark always wants these nice dinners. We are at odds.

This week, I'm not posting recipes with it but I think in the future I will try and get a meal plan up on Saturday's along with a grocery list just in case you want to make some of the meals along with me! Sometimes it's a lot easier when it is aleady done for you!
